I have a couple of recipes for meatloaf already up, this is just another version of stuffed meatloaf. This time I stuffed it with spinach, mushrooms, prosciutto and swiss cheese. Its a great way to get your veggies and meat all in one dish.
This time instead of wrapping meat around something, I treated it more like sushi. I put down wax paper (parchment paper would work better I think), formed the meat into a flat rectangle.
I then sprinkled on a mixture of frozen spinach (thawed and water squeezed out), chopped mushrooms and seasonings. I pressed it lightly into the meat, then gave it a final dusting with my all purpose rub.
Next I layered on swiss cheese and prosciutto. Using the wax paper, I basically folded it over itself lengthwise. Like you would a giant sushi roll. Pressing the roll together, using the wax paper to keep it together. Place on a foil lined and PAM sprayed cookie sheet and gently rolling back and forth, remove the wax paper.
I then pressed a small divet along the length of the roll (like you would with a hamburger patty) and topped with my standard meatloaf sauce (see above meatloaf link).
Bake at 350°F for 1 hour.
