I love gomae (goma-ae) and I wanted to try my hand at making it. It took me a few batches to get it right. The first 2 were so off as to be unrecognizable. Thick as mud, black as sin, and somewhat rank. I had to keep trying. And I nailed it. Well I would say it was 90% nailed, but trying to keep it low carb throws it off just a smidge. But still very good!
I think using mirin and real sugar would have made the tiny bit of difference needed.

Ingredients
- 2 tbsp white miso paste
- 2 tbsp tahini
- 2 tbsp sesame seeds roasted then ground
- 1-2 tbsp rice wine vinegar *1
- 1 tsp soya sauce
- 1-2 tsp Stevia*2
- 1 tsp sesame oil *3
- Water to thin add just a bit at a time until consistency preferred!
Instructions
- Mix all the ingredients except the water. It may be thick and paste like.
- Add dribbles of water until its the perfect consistency for you.
- Adjust the flavour to your liking by adding a bit more sugar or rice wine vinegar.
- Drizzle over spinach that has been quickly blanched, thrown in an ice bath, and squeezed out.
- Sprinkle with sesame seeds and serve.
Notes
*1 Original recipes call for mirin, a sweeter sake style wine, which contains way more carbs. If you have mirin, use it and start with 1 tbsp of it
*2 Stevia was used instead of sugar, which can add a slightly different flavour. If you use sugar start with a couple tsp and then adjust to taste
