Summer is coming! And that means ice cream. Now I’ve made low carb ice cream, but who doesn’t love a good fudgesicle too? I came across this recipe though a roundabout way. I just remember hitting a site that showed a picture of a fudgesicle, from there it was a search on low carb ones. I came across a recipe that used honey or maple syrup, so to keep it truly down on carbs, I switched it to Torani sugar free syrup as the base sweetener. I have to admit that these low carb fudgesicles hit the spot.
I used a fudgey-tasting, dark, red cocoa that’s super low in carbs (Guittard Rouge Cocoa). I love this cocoa in just about anything as it truly does have that rich fudge flavour.
The recipe also makes only 6 fudgesicles. I may double it next time and use one can of coconut milk and one can of coconut cream to get that extra creamy taste.
Low Carb Fudgesicles
Ingredients
- 1 can Aroy-D coconut milk**
- 1/3 cup dark cocoa
- 1 teaspoon vanilla
- Sweetener of choice 3-4 squirts Sugar Free Chocolate Torani, few drops of liquid Stevia
- Pinch of sea salt
Instructions
- Mix all ingredients in a blender, let sit for 30 minutes, give a quick whiz again in the blender and pour into the molds.
Notes
**I like using Aroy-D as its just coconut extract and water. No preservatives.
