I came up with idea to make a steak and potato pie while we were eating lunch today. I always find it hard to think of a meal that is hours away, specially before or while eating lunch. I go so much by what I’m craving and usually decide what to make for supper about an hour before I get home. But, the Hubby has hurt his back and running around is limited, so knew I would have to make something for supper (vs going for something). So wrote down a short grocery list while eating and we stopped at the grocery store on the way home.

Steak was to be the key meat ingredient, but buying almost 2 pounds of steak can be expensive so I ended up using some chuck, cut into pieces. After simmering for so long and then being cooked in the pie, it was tender and delicious. If I was a cat, I would have been purring up a storm of content while scooping it into my gob. I probably enjoyed it more than the Hubby did.

The filling recipe made enough for a 3″ deep pie plate, with a lunch container left over. If you are using regular pie plates, I can see it easily making 2 pies.

Tip: I cry like a baby when I cut an onion. Doesn’t matter what method I use to cut them (freezing, onion goggles, vents, pieces of bread.) So, I find a quick pulse in a small food processor does the job for me and I don’t have to access the onions until I need to. 
 
NOTE: I used a store bought deep dish pie crust for the top, and did homemade pie dough for the bottom. I had to do it this way as the pre-made crust wasn’t big enough to form the bottom layer and I didn’t have enough ingredients to make a bottom AND a top crust. I let the store bought completely thaw on a large piece of wax paper, gently pressing flat when it was thawed, then put it in the fridge until needed.
 
I gently put the homemade crust into the plate, pressing the corners in, letting the excess drape over the edge. Scooped in the filling, then folded the edges of the shell over. Then used a cookie cutter to punch some circles out of the store bought crust, used an egg wash on the backs of the circles, and placed them around the.
 
SUB NOTE: the pie dough recipe is to make 2 regular pie crusts. My deep dish pie plate is 3 inches deep and as such the recipe made just over 1 big pie shell. I cut circles out of the store bought crust and used those on top.

Pie Crust

Ingredients

  • 2 cups flour
  • 1 teaspoon salt
  • 2/3 cup 10 tbsp + 2 tsp cold unsalted butter
  • 5-7 tablespoons cold water

Instructions

  • Place flour and salt in a bowl and mix.
  • Cut cold butter into flour (I mix into flour with my fingers).
  • Add water to form dough.
  • Once the dough is formed, wrap in saran wrap and place in fridge.

Notes

This recipe makes 2 regular pie crusts. I have a 3" deep pie plate and it makes just over one crust.
Add savory items like oregano and garlic or sweet highlights like cinnamon and nutmeg to flavor the dough.
