I love mojitos as they are such a summery drink. A perfect cool beverage to sip on when the summer heat is doing its thing. And its one of those drinks that can be made low carb by simply melting some Stevia in a small amount of hot water. I put a good heaping tablespoon of Stevia in a cup, about 1/4 cup of water in the bottom of a mug, a couple mint leaves in, and nuked it for 30 seconds.
I love the classic mojito, but adding berries or fruits that you love would be just as good and refreshing!

Ingredients
- 1/2 cup white sugar
- Equal amount of water
- Mint leaves
- Limes
- White rum
- Ice
- Club Soda
Instructions
- Create a simple syrup by simmering equal amounts of sugar and some mint leaves.
In a tall glass, place the following and muddle
- A 1/4 of a lime, cutting that quarter in half
- 2-3 large mint leaves, torn into pieces
- A few slivers of crushed ice
- Fill the glass with icecubes
- Add a shot of sweet white rum
- Few squirts of lime juice
- 1 - 2 tbsp of the simple syrup
- Top off with club soda and another leaf or two
- Stir to mix up and serve!
