Another transfer over, I’m going to be carrying over waffles and syrup recipes.
For some reason I don’t like pancakes. But I do like waffles. I love how the little divots can fill up with warm melted butter. I’m not a syrup fan either, but I do like homemade syrup. Its just a bit more of buttery heaven. Or peanut butter. I will eat pancakes slathered with peanut butter. Which kind of defeats the purpose of pancakes, no? Might as well just have toast.

Chocolate Waffles
Ingredients
- 2 c flour
- 1 c unsweetened cocoa
- 1 tbs baking powder
- 2 tbs white sugar
- 1/2 tsp salt
- 2 c milk
- 4 large eggs separated
- 4 tbs canola oil
- 1 1/2 c semi-sweet choco chips OPTIONAL
Instructions
- Sift cocoa, flour, and baking powder into a bowl. Add sugar and salt and mix thoroughly.
- Whisk together milk, egg yolks, and oil. Add to flour mix and whisk gently until combined.
- Beat egg whits until they form soft peaks. Fold into batter. Add chocolate chips if you are adding them.
- Follow manufacturer's instructions for cooking time. (Mine is 8 minutes)

Homemade Eggnog Syrup
Ingredients
- 1 stick / 1/2 c butter
- 3/4 c full fat eggnog
- 1 c sugar
- 1 tsp vanilla
- 1 tsp baking soda
Instructions
- In a large saucepan place the butter, eggnog, and sugar.
- Bring to a boil, stirring continuously.
- Remove from heat and whisk in vanilla and soda (it will foam!)
- Serve over hot pancakes or waffles.
- Enjoy!
