This is one of those light, surprisingly tasty, yet low-carb desserts. Perfect for summer or when you want something sweet after the umpteenth meal of meat and veg. Not to mention super easy to put together. I am calling it Low Carb Berry Fool, as its basically whip cream and berries, but with an extra dimension.
You can use any flavouring of jello and any of your favourite berries. I used blackberries as they are not only cheap right now, but also one of the lowest carb berries you can get. I used (sugar free) peach jello because it was what I had.

Low Carb Berry Fool
Ingredients
- Sugar Free Jello
- 1 cup whipping cream
- Dash of sugar free Torani syrup
- 2 pints of berries washed
Instructions
- Prepare the jello as per instructions and let sit in fridge for about 1 to 1 1/2 hours.
- Once it has mostly firmed up, break up with a fork.
- Prepare the whip cream, just SLIGHTLY sweetening with some sugar free vanilla Torani syrup.
- Blend the whip cream and jello by giving a slight whip together with the hand mixer.
- Fold in the berries and pop back in the fridge for about an hour.
