Another winning low carb recipe! I found this one on Just Enjoy Food and it tastes pretty good. While cooking it smells like eggs, which had me worried as I’m only a fan of eggs if they come with toast and bacon. But once cooked it ended up tasting like a tropical waffle. If we could have mango’s and pineapple, those on top would have been awesome.
I adjusted her recipe just a smidge, by creating them the way I do my regular waffles (separating the eggs and whipping the whites until fluffy and adding just a sprinkle of Stevia). I halved the below recipe and got 2 regular sized waffles, perfect for a breakfast for two.
(The ones in the picture are nutmeg and blueberry, but add whatever fruit suits your fancy.)
Coconut Flour Waffles
Ingredients
- 8 free-range eggs
- 1/2 cup melted butter
- 1/2 cup coconut flour
- 1/4 teaspoon Mediterranean salt
- Dusting of Stevia maybe 1/2 tsp at the most
- 1/4 teaspoon baking soda
- 1/4 cup canned coconut milk
Instructions
- Melt the butter in the microwave and set aside.
- Separate the eggs and place the yolks with the coconut milk. Whisk together.
- Beat egg whites until silky and soft peaks form. Set aside.
- In a bowl combine the coconut flour, salt and baking soda, whisk to mix.
- Slowly drizzle the melted butter into the milk and eggs mix, then add that mixture to the flour, salt, and baking soda.
- Fold in the egg whites until blended.
- Add any berries or spices as wanted and cook as per your waffle iron's instructionaq
