We are one of the few who actually love brussel sprouts and seriously, who doesn’t love bacon? I would have added some crumbled blue cheese or feta at the end of this dish, but hubby has kind of an aversion to both 🙁
And by the time I remembered that I wanted my own feta on there, the brussel sprouts were already half eaten. 😛

Brussel Sprouts with Bacon
Ingredients
- Enough brussel sprouts for 2 people
- 4 strips of bacon chopped
- Olive oil
- 1 tbsp minced garlic
- 1 c veggie stock
- Salt and pepper
Instructions
- Prep the sprouts by cutting off the ends, removing any loose leafs, and cutting the sprouts in half
- Toss in a very light drizzle of olive oil, salt and pepper, and the minced garlic
- In a frying pan, cook the bacon until crisp
- Add the brussel sprouts, placing the cut sides down, let them cook a few minutes to brown
- Give a stir and add about 1/4 c of stock to deglaze the pan
- Add about another 1/4 c of stock and let the liquid reduce, tossing the sprouts occasionally.
- Add remaining stock, put on lid and let steam for about 10 minutes (or until the sprouts are soft)
- At this point, if your hubby isn't picky, sprinkle on some blue cheese or feta crumbles, toss and serve!
