A friend of mine and I are attempting DDP Yoga. Well, the hubby and I are too so its really a double dose. Anyhoos, as the girlfriend was coming over so we could work on the program of pain, I needed something that could spend awhile in the oven. I gave her a list of dishes and she chose meatloaf. And really what could be better than bacon after a workout? Nothing. So bacon wrapped meatloaf it was.

Bacon Wrapped Meatloaf

Ingredients

Meatloaf Ingredients

  • 500 g ground beef
  • 500 g ground italian sausage
  • 1 egg
  • 1 tbsp dried onion flakes
  • 1 tbsp dried oregano
  • 1 tsp cumin
  • 1 tsp basil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp black pepper
  • 1/2 tsp chili flakes
  • 1 tsp salt
  • 1 tbsp minced garlic
  • 1 small onion grated

Topping Ingredients

  • 1/2 c ketchup
  • 1 tbsp dijon mustard
  • 1 tsp worcestershire sauce
  • 1 tsp yellow mustard
  • 4-5 strips of bacon cut in half

Instructions

  • Mix meatloaf ingredients in a bowl
  • Line a cookie sheet with tinfoil and place the meat mix in the center. Form into a log shape.
  • Slightly flatten the top and pour the topping mixture over the top
  • Lay the strips of bacon over the whole log
  • Bake at 350F for 1 hour. I crisped up the bacon by popping it under the broiler for a couple minutes.
