So I like eating plain greek yogurt drizzled with some local honey. The problem is the texture. Its a little… gooey? gummy? something thick and kinda ick. Anyhoos, I decided to join the crazy hippy-dippy West Coast’ers and try and help the texture with some homemade granola.

I’d say the granola was a moderate success. I prefer really chunky granola and because it was my first time making it, I started off by following directions in one recipe. Which makes for a even textured granola (if that makes sense?). Its tasty enough, but my next attempt will be a for a super chunky style.

GRANOLA

6 c rolled oats (not quick!)
2 c nuts
1 tbsp cinnamon
1 tsp nutmeg
Dash of salt
1 /2 to 1 c honey (I used a cinnamon honey, nuked for about 15 seconds to make it quite liquidy)
1/2 c vegetable oil

In a very large bowl, mix the above until evenly distributed.
PAM spray a large cookie sheet and pour mix into it.
Spread evenly and press down granola with whole hands to compact a bit.
Bake for about 25-30 minutes at 350F, until golden brown.
Remove from oven and place cookie sheet on rack to cool.

Will keep for approximately a month. Feel free to add chocolate chips, coconut, dried fruit, raisins, 1/2 c peanut butter, etc. All to your taste!
