Another one of those nights where I wanted to use up what was in the fridge. This included a package of bratwursts and a head of cabbage. I originally wanted to do a quick sauerkraut, but didn’t have all the ingredients. So I threw this together and it was very tasty!

Bratwurst and Cabbage
Ingredients
- 1/2 head cabbage sliced
- 1 onion cut in half and sliced thin
- 5-6 brats
- 8 slices bacon
- 1 tsp mustard seed
- 1/2 tsp caraway
- 1/2 tsp cumin seeds
- 1 tsp paprika
- 1 tsp garlic powder
- S&P to taste
- Balsamic vinegar
Instructions
- Cut the bacon into small pieces and in a deep frying pan, render the fat (start with a cold pan!). As the fat begins to render add the mustard seeds, caraway, and cumin seeds, and sausage.
- When the bacon has crisped and the sausages have started to brown, remove the sausages and add the onion and cabbage, toss to coat and mix with the bacon. Add the paprika, garlic powder, S&P, and toss to mix. Nestle the sausages into the cabbage and put the lid on.
- Turn down to low-medium and let cook, covered, for about 10 minutes.
- Remove the lid, drizzle with some balsamic vinegar (about 2 tbsp). Stir to mix and let cook for another 5 minutes or so. Stirring occasionally.
