Apfel Pfannekuchen (German Apple Pancakes)

Ingredients

The Apples

  • 2 medium apples cored, peeled, and cut into thin slices
  • 5 tbsp butter
  • 5 tbsp brown sugar
  • Sprinkle of nutmeg and cinnamon

The Batter

  • 3 eggs
  • 3/4 c all-purpose flour
  • 1/2 tsp salt
  • 1 c milk
  • 4 tbsp melted butter
  • Sprinkle of nutmeg and cinnamon

Instructions

The Apples

  • Melt butter in a oven safe non-stick frying pan. Add the brown sugar and stir to combine.
  • Once it just begins to carmelize, add the sliced apples, with a sprinkle of cinnamon and nutmeg. Let the apples carmelize and soften.

The Pancakes

  • Combine the batter in a bowl, whisking until smooth.
  • Pour batter over apples and let the batter simmer in pan until the edges of the batter begin to bubble.
  • Pop the pan into an oven, at 425°F, and bake for 20 minutes until edges are brown and crisp and the cake is puffy.
  • Slide onto plate and dust with icing sugar.
