Apfel Pfannekuchen (German Apple Pancakes)
Ingredients
The Apples
- 2 medium apples cored, peeled, and cut into thin slices
- 5 tbsp butter
- 5 tbsp brown sugar
- Sprinkle of nutmeg and cinnamon
The Batter
- 3 eggs
- 3/4 c all-purpose flour
- 1/2 tsp salt
- 1 c milk
- 4 tbsp melted butter
- Sprinkle of nutmeg and cinnamon
Instructions
The Apples
- Melt butter in a oven safe non-stick frying pan. Add the brown sugar and stir to combine.
- Once it just begins to carmelize, add the sliced apples, with a sprinkle of cinnamon and nutmeg. Let the apples carmelize and soften.
The Pancakes
- Combine the batter in a bowl, whisking until smooth.
- Pour batter over apples and let the batter simmer in pan until the edges of the batter begin to bubble.
- Pop the pan into an oven, at 425°F, and bake for 20 minutes until edges are brown and crisp and the cake is puffy.
- Slide onto plate and dust with icing sugar.
