Both the Hubby and I, luckily, love calamari (or octopus). We love it battered and fried, done with garlic butter, done in tomato sauce, pretty much any way we’ve had it, we like it.

So when we saw a bag of frozen calamari rings on sale, I wanted to make something with it. Still being on the low carb diet (only 19 weeks till Hawaii!), I skipped the battered and fried method. I found this French inspired recipe and it was very easy to whip up. If you wish to give that extra step up, use white wine instead of the stock.

As a side note, I think next time I’ll add a handful of calamata olives and mushrooms.

Calamari in Tomato Sauce

Ingredients

  • 1 395 g bag of calamari rings defrosted
  • 1 onion chopped small
  • 4 garlic cloves minced
  • 1 bottle diced tomatoes
  • 1/4 cup veggie stock
  • 1 tablespoon sundried tomato puree
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 2-3 sprigs fresh oregano
  • ½ teaspoon cayenne pepper
  • S&P to taste
  • Feta cheese for sprinkling on top
  • Olive oil for cooking

Instructions

  • In a large frying pan, heat a couple tablespoons of olive oil.
  • Saute the garlic and onion until soft.
  • Add the rings and saute for about 3 minutes, stirring frequently.
  • Add the herbs, stock, tomato sauce and paste, cayenne, and salt and pepper.
  • Cover with a lid and simmer on medium heat for 30 minutes.
  • Remove from heat, pour into dish, sprinkle with feta and serve.
