I made these for my mom for Christmas after we had been talking about cakes one day. She mentioned how she always loved the Waldorf red velvet cake. But hadn’t had it for years.
So I dug up the recipe (I think its the original?) and made cupcakes for her. She loved them and my one nephew went a little bonkers for the icing I think. I have to say its a very nice icing.

Waldorf Astoria Red Velvet Cupcakes
Ingredients
- 1/2 c unsalted butter softened
- 1 1/2 c granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 oz. liquid red food coloring
- 2 tbs cocoa powder
- 2 1/2 c all purpose flour sifted
- 1 tsp baking powder
- 1 tsp salt
- 1 c buttermilk
- 1 tsp baking soda
- 1 tsp white vinegar
Instructions
- Preheat oven to 350 degrees. Grease two 9-inch round cake pans with shortening (or PAM spray) and line bottom with parchment or put liners in a cupcake tin.
- In the bowl of a stand mixer, combine butter and sugar until fluffy. Add the eggs and vanilla. Mix well.
- In a small condiment cup, stir together liquid food coloring and cocoa powder until smooth and then add to the butter mixture.
- Sift together flour, baking powder, and salt. Add flour to butter mixture in three additions, alternating with the cup of buttermilk. Begin and end with flour. Scrape down bowl and mix well.
- In a small condiment cup, combine baking soda and vinegar. Mixture will bubble and fizz. Pour into the cake batter and mix until well incorporated.
- Put batter in cake tin or cake pans and bake for 25-30 minutes
- Let cool completely before icing.
Boiled Icing
Ingredients
- 1/4 c flour
- 1 tsp salt
- 2 c milk
- 2 c 4 sticks unsalted butter, softened
- 2 c granulated sugar
- 1 tablespoon vanilla extract
Instructions
- In a large saucepan, whisk together flour and 1/2 cup of milk until smooth. Set over medium heat and and whisk in remaining milk and salt. Whisk constantly until mixture is thick and paste-like - AND SMOOTH. Remove from heat and let cool completely.
- In the bowl of a stand mixer fitted with the whisk attachment, combine butter and sugar. Beat until light and fluffy. Add vanilla and mix well.
- Beat cooled flour mixture into the butter mixture on high speed. Beat for several minutes (6-10) until sugar granules have dissolved and the mixture is super silky and fluffy. You can check this by rubbing a little between your thumb and forefinger.
