I saw this idea on one of the cooking shows and knew I had to take a stab at it. I basically took my meatloaf recipe and added the cheese and stuffed it with sausage.
It basically makes a giant bacon wrapped slab of meaty goodness.
Oh and a trick for grating the onion? I used a veggie holder from a mandolin slicing set and used it to hold the onion. That way you can finely grate almost the whole onion without including your fingers.

Sausage Stuffed Cheesy Meatloaf
Ingredients
The Loaf
- 2 lbs ground meat
- 1 egg
- 1 tbsp dried onion flakes
- 1 tbsp dried oregano
- 1 tsp cumin
- 1 tsp basil
- 1 tsp chipotle seasoned black pepper
- 1 tsp salt
- 1 tbsp minced garlic
- 1 small onion grated
- 1/2 tsp smoked paprika
The Topping
- ½ c ketchup
- 1 tbs dijon mustard
- 1 tsp worcestershire sauce
- 1/2 tsp yellow mustard
Extras
- Bacon strips
- 1 cup of 1" cubed cheddar
- 2 bacon cheddar sausages a nice spicy italian sausage would be good too
- 1 c shredded old cheddar
Instructions
- Prep a cookie sheet by lining it with tinfoil
- Mix the topping in a small bowl
- Mix the meatloaf ingredients in a large bowl, add the cheese cubes and mix.
- Place on the foil lined sheet and form into a large log shape.
- Press a divot along the length of the loaf, place the sausage in.
- Press the meat mix tight around the sausage and slightly flatten the top.
- Smear on the topping to evenly coat the loaf.
- Using strips of bacon, cover the loaf completely.
- Bake at 350F for 1 hour, remove and sprinkle top with shredded cheddar and pop back into oven for another 10 minutes or until cheddar bubbly and melted.
