Prep a cookie sheet by lining it with tinfoil
Mix the topping in a small bowl
Mix the meatloaf ingredients in a large bowl, add the cheese cubes and mix.
Place on the foil lined sheet and form into a large log shape.
Press a divot along the length of the loaf, place the sausage in.
Press the meat mix tight around the sausage and slightly flatten the top.
Smear on the topping to evenly coat the loaf.
Using strips of bacon, cover the loaf completely.
Bake at 350F for 1 hour, remove and sprinkle top with shredded cheddar and pop back into oven for another 10 minutes or until cheddar bubbly and melted.
