I had a recipe for chewy chocolate chip cookies pop up from A Sassy Spoon. I love a good chewy cookie, and these were still perfectly chewy a couple of days later. I used some shaved/chopped chocolate from a Bernard Callabeau block and will continue to use it going forward, it was so good! If you can’t find good dark chocolate, chocolate chips will work in a pinch.
I think these will be my go-to for whenever chocolate chip cookies are needed!

Chewy Chocolate Chip Cookies
Ingredients
- 1/2 cup unsalted butter melted
- 3/4 cup brown sugar packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/3 cup all-purpose flour
- 1/2 teaspoon baking soda
- Pinch of salt
- 1 cup chopped dark chocolate
Instructions
- In a mixer or a large bowl, beat the melted butter and sugars for 5 minutes.
- Add the egg and vanilla extract.
- Mix until smooth and well combined.
- Add the flour, baking soda, and salt, mixing until JUST combined. Do NOT over mix.
- Fold in chopped chocolate.
- Using a cookie scoop, form dough into balls (approx. 1.5 tablespoons of dough).
- Place on a baking sheet and refrigerate the dough balls for at least 20 minutes (I let mine chill for one hour).
- When ready to bake, preheat oven to 350°F. Line a different baking sheet with parchment paper and place dough balls on baking sheet.
- Bake for 10-11 minutes until the edges are golden brown.
- Remove from oven. (It's ok if they are a little undercooked, they will continue to bake as they cool.)
- Cool for 5 minutes. Serve and enjoy!
