When you want something quick and there are fresh small trout at the market just begging to be eaten, then this is the way to do it.
Trim off fins, head, and tail off of a cleaned trout.
Sprinkle inside with some Old Bay seasoning (or rub of choice)
Pat the outside dry, and drizzle with a vegetable oil and smear to cover skin
Sprinkle with a spicy coarse salt
In a cast iron pan, melt 2 tbsp of garlic butter. Add vegetable oil to coat the bottom of pan and heat.
Add fish, fry for a few minutes each side. (Time depends on how big your fish is)
