I recently made almond bacon chicken and had made a quick spice mix for it. Some of the spice mix gets tossed with the slivered almonds. I had a bit left of the mix left over and hadn’t put it away yet, when I went into the kitchen to grab some peanuts to snack on. I didn’t want to waste the remaining almonds, so threw a handful of peanuts in with them and gave a toss to coat.
They were amazing and took plain ole salted peanuts up a couple levels! I liked them so much that I made the spice mix on its own and have dubbed it as seasoning mix for nuts (I think it would taste great on any nut, not just peanuts!)
I used my recipe for the all purpose rub and some pre-made and store bought Moroccan rub. In the chicken recipe, I tossed the almonds with a small teaspoon of bacon fat, but peanuts are quite oily on their own and it shouldn’t be required.
