Another one of those , “throw whats in the fridge into a pot” type of dishes. It made for a rustic light summer dish. No measurements as it was a bit of this and that. Use seasonings you’re partial to.

Chorizo Veggie Toss
Ingredients
- 4 chorizo sausages cut into 4 pieces each
- 1/2 head of cauliflower cut into large pieces
- Handful of baby tomatoes
- Handful of mixed pitted olives
- 2 preserved lemons pulp removed
- 5 smashed garlic cloves
- 4-5 thick sliced mushrooms
- 1/2 red onion chopped
- Small bunch fresh oregano chopped
- Sprinkle of rub S&P, dried oregano, dried basil
- Olive oil
Instructions
- Put all the ingredients into a bowl, drizzle with olive oil and toss to coat
- Put in a tajine and bake for 1 hr at 350F
