Another one of those , “throw whats in the fridge into a pot” type of dishes. It made for a rustic light summer dish. No measurements as it was a bit of this and that. Use seasonings you’re partial to.

Chorizo Veggie Toss

Ingredients

  • 4 chorizo sausages cut into 4 pieces each
  • 1/2 head of cauliflower cut into large pieces
  • Handful of baby tomatoes
  • Handful of mixed pitted olives
  • 2 preserved lemons pulp removed
  • 5 smashed garlic cloves
  • 4-5 thick sliced mushrooms
  • 1/2 red onion chopped
  • Small bunch fresh oregano chopped
  • Sprinkle of rub S&P, dried oregano, dried basil
  • Olive oil

Instructions

  • Put all the ingredients into a bowl, drizzle with olive oil and toss to coat
  • Put in a tajine and bake for 1 hr at 350F
