I was in a cookware store, grabbing a few things, and the cashier made a comment about cornbread and I realized I hadn’t transferred my recipe over.
I don’t have a picture at the moment, but as soon as I make it again, I will. Its based on a recipe from a friend who visited years ago (from Iowa).
Cornbread
Ingredients
- 1 cup flour
- 1 cup cornmeal fine
- 5 tablespoons sugar
- 2 slightly heaped teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup oil
- 1 large egg slightly beaten
Instructions
- Mix dry ingredients, add milk, oil, and egg. Stir until everything is combined (don't whip like a cake batter. Just mix well type of thing.
- Pour batter into pan (Pam or butter), bake for 24-30 minutes at 400°F (until knife comes out clean).
- For a really yummy twist - just chop up some pickled jalapenos small and mix into batter. top with a yummy cheese (i used gouda last time and it was awesome).
