Combine all the ingredients in a pot.
Simmer in a crockpot for 8 hours on low OR bring to boil in a large pot and then simmer for a few hours. You want the peas to break down into mush and the soup to be THICK THICK THICK!

If using a full smoked pork hock, when the soup is almost done, remove from the pot, cut and cube any meat, place meat and the bone back into the pot.
