Preheat the oven to 500F
Take the roast and place on top of the veggies.
Cook for 25 minutes. UNCOVERED! (Or cook at 500F for 7 min a pound)
Turn off the oven.
Don't be tempted to peek or open the door! Just leave it alone and let it sit in there for another 2 1/2 hours.
Remove from the pot, wrap in tinfoil and set aside to rest.
Scoop the veggies out of the pot and pour the liquid into a smaller saucepot.
Make gravy as preferred. (I add some water, S&P, paprika, dried oregano and thicken it.)
(The roast I did came out at 136F - a medium rare.)
