1lbmild italian sausage
1can black soy beans
1 796mlcan crushed tomatoes
2-3chopped adobe peppers
1small package of white button mushroomssliced
2tablespoonsOro Di Parma Italian tomato paste
3cupsstock2 cups beef, 1 cup veggie, and a bit more water swirled around the tomato can to clean it out
Few hearty dashes of worcestershire sauce
Seasoning Mix
2tablespoonsMexican chilli powder
1teaspoonblack pepper
1 1/2tablespoonsgarlic powder **
1teaspoononion powder
1teaspoonpaprika
2teaspoonssmoked paprika
1tablespoonoregano
1/2tablespoonhickory smoked garlic bits
1teaspooncumin
Salt to taste
Instructions
Saute the onion in a couple tablespoons of olive oil until soft.
Add the ground meat and break up. Sprinkle half of the seasoning mix on the meat and toss to blend.
Once the meat is about halfway through browning, add the mushrooms and adobo peppers and stir to mix.
Once the meat is finished browning, add the tomatoes, black soy beans, stock, tomato paste, the rest of the spices, and the worcestershire sauce.
Bring to a simmer. Salt to taste.
Notes
I didn't have an ounce of garlic in my house! I would have minced some garlic cloves and used less powder. Note that 1 cup of black soy beans is only 2 carbs!
