*1 Original recipes call for mirin, a sweeter sake style wine, which contains way more carbs. If you have mirin, use it and start with 1 tbsp of it
*2 Stevia was used instead of sugar, which can add a slightly different flavour. If you use sugar start with a couple tsp and then adjust to taste
*3 Some recipes call for it, some don't. I added just a bit as I like the flavour.
