Place the chive blossoms in a bowl of cold water. Gently swish to remove any dirt.
Drain the flowers thoroughly and lay on paper towel to dry overnight.
Place the blossoms in a jar.
Warm the vinegar and pour over the blossoms in the jar. Cool completely before covering and store in a cool, dry place for two weeks.
Strain the vinegar through cheesecloth into a clean jar.
