Prep the sprouts by cutting off the ends, removing any loose leafs, and cutting the sprouts in half
Toss in a very light drizzle of olive oil, salt and pepper, and the minced garlic
In a frying pan, cook the bacon until crisp
Add the brussel sprouts, placing the cut sides down, let them cook a few minutes to brown
Give a stir and add about 1/4 c of stock to deglaze the pan
Add about another 1/4 c of stock and let the liquid reduce, tossing the sprouts occasionally.
Add remaining stock, put on lid and let steam for about 10 minutes (or until the sprouts are soft)
At this point, if your hubby isn't picky, sprinkle on some blue cheese or feta crumbles, toss and serve!
