Bruschetta

Ingredients

  • 1 pint baby tomatoes
  • Handful of basil leaves
  • 1/2 red onion
  • 1 tbs olive oil
  • 1 tsp balsamic vinegar
  • 1/4 to 1/2 small head of garlic chopped fine
  • S&P to taste
  • Feta cheese
  • Large baguette

Instructions

  • Chop the tomatoes, basil, feta, and onion and place into a bowl, add garlic.
  • Drizzle with olive oil and balsamic vinegar to taste.
  • Salt and pepper to taste.
  • Serve with slices of baguette that have been toasted or grilled in garlic butter.

Notes

Mix a bit ahead of time, this way it lets the flavours meld.
