Trim the brussel sprouts and place in a large ziploc bag.
Drizzle with olive oil and add desired seasonings to the bag.
Toss so all the sprouts are coated.
Parchment line a cookie sheet and pour the brussel spouts on the sheet in an even layer.
Bake at 400F for 30 minutes, or until the sprouts have crisped up. Toss or shake the brussels spouts when 15 minutes to evenly cook.
Remove from the oven and grate the cheese over the brussel sprouts.
Serve immediately.
