Chocolate Chip and Walnut Banana Bread

Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter melted and cooled to room temperature
  • 1 tablespoon buttermilk*
  • 2 eggs room temperature
  • 1 1/2 cups mashed bananas room temperature
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon fresh grated nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup crushed walnuts (or pecans)
  • 1/2 cup mini dark chocolate chips

Instructions

  • Preheat oven to 325°F.
  • Beat the melted butter and sugars for approximately 2-3 minutes, until it becomes pale.
  • Add the eggs, one at a time, beating until mixed.
  • Add the vanilla and mashed bananas and beat until mixed
  • Whisk the dry ingredients together and add to the wet mix. Fold in until JUST combined.
  • Fold in the nuts and chocolate chips.
  • Place the gooey thick batter into a loaf pan that has been greased / sprayed. I like to make a liner with parchment paper for easy lifting out of the pan. If you use parchment paper, lightly spray it as well.
  • Bake for 60-70 minutes (until a skewer comes out clean.)

Notes

* If you don't have buttermilk, take a tablespoon of milk and add 1/8 teaspoon of vinegar to it.
