I was always leary of trying this salad. I’m not sure why. I love watermelon. I love feta. I love things like salted apples. So when I made it for my sister’s birthday party it was a new experience. And it was soooo good! So refreshing with a dish with heat like spicy ribs.
The only thing is that I never took measurements. I just eyed it. Either melon ball or cube a bowl of watermelon, sprinkle with some crumbled feta, chop up some basil and scatter that on, just a light drizzle of olive oil and a splash of balsamic vinegar. Toss and put in the fridge for half an hour or so to chill.
Trust me, you have to try it, its not as crazy as you think it is!
