So it was finally cooler today. Cloudy and a bit drizzly. Which called for a roast Sunday dinner. I didn’t want anything too crazy, so when I saw a 3lb pepper crusted roast for only $12 at the store, I decided to grab it for dinner. But an eye of round is not the best cut. Its too lean and doesn’t have enough marbling to make for a nice roast. So after a bit of digging, I came across this recipe on The Domestic Man.

He seemed to be, at first, as pessimistic about the recipe as I was. But after reading how well it turned out and how pleased he was with it, I thought it wouldn’t hurt anything to try. If it came out uncooked…. well there is a McDonalds and an A&W close.

I had to do a bit of finagling since my oven hates me and refuses to heat properly. I cooked it for an extra 10-15 minutes since I wasn’t sure it was getting to 500F that is called for. (In the recipe below, times reflect the recipe on the Domestic Man site.)

I used a pre-seasoned pepper crust roast, but if the roast had been plain, I would have made a herb n’ garlic mix and smeared all over the roast first. I added a bit of liquid and veggies to my recipe, but mostly because I believe gravy is a pertinent and very critical food group. The meat came out perfectly cooked and very tender!

Roast Eye of Round

Ingredients

  • 3 lb seasoned eye of round roast

In the bottom of a dutch oven place

  • 1 onion cut into rings
  • 12 crimini mushrooms
  • 1 sliced leek
  • 2 c beef stock
  • Sprigs of fresh oregano
  • Course salt
  • Fresh ground pepper

Instructions

  • Preheat the oven to 500F
  • Take the roast and place on top of the veggies.
  • Cook for 25 minutes. UNCOVERED! (Or cook at 500F for 7 min a pound)
  • Turn off the oven.
  • Don't be tempted to peek or open the door! Just leave it alone and let it sit in there for another 2 1/2 hours.
  • Remove from the pot, wrap in tinfoil and set aside to rest.
  • Scoop the veggies out of the pot and pour the liquid into a smaller saucepot.
  • Make gravy as preferred. (I add some water, S&P, paprika, dried oregano and thicken it.)
  • (The roast I did came out at 136F - a medium rare.)
