I was perusing Flipboard and came across the below recipe for low carb pizza bites. With that many eggs, I knew it was just going to be glorified quiche bites, but I whipped together a super tasty sauce that covered any of the overt egg taste. Both were given the Hubby Stamp of Approval. I used a bag of the pre-sliced pepperoni and it added a nice zip.

For the sauce, I threw together some pureed tomato, sundried tomato paste, capers, a whole Thai chili, garlic, dried oregano and basil, fresh oregano, and S&P. I’ll probably be making it for some chicken parmesan so will try and remember to get some proper measurements as Hubby loved it.

Pizza Bites

Ingredients

  • 1/4 cup coconut flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Pinch of sea salt
  • 4 eggs lightly beaten
  • 1 cup grated then chopped small mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup pizza pepperoni chopped small

Instructions

  • Mix all ingredients in a bowl and set aside for 10 minutes.
  • Scoop in small tablespoon portions, roughly shape into a ball, and place each ball into a PAM sprayed mini-cupcake tin.
  • Bake at 375°F for 20 minutes until golden brown.
  • Serve with a marinara sauce of choice.
