We are going back to eating low carb next week and in preparation are going hungho on all the things we won’t be eating for about 6 months. If you’re wondering why we go for low carb, its because we found its the best way of eating for fibromyalgia. Reduces the inflammation in the joints, which is caused by the Omega 6 found in carbohydrates. So after holidays and binging on buns and sweets and all sorts of heavy goodies, we find ourselves going hardcore on low carb for a bit, then settling into a normal low-carb way of eating. I feel best with that sort of diet and the joints generally don’t complain as much. Not zero carb mind you, but at least a high protein and minimal carbs.

Anyhoos, I saw this recipe on Tastespotting (only THE best food p0rn site ever) and with a few changes, whipped up a batch.

CHEESY CROCKPOT POTATOES AND CAULIFLOWER

In crockpot put:
1 can mushroom soup1 c milk
1/2 tsp cumin
1 tsp dry mustard
1 tbsp minced garlic
1/2 tsp paprika
1/2 tsp salt
1 tsp pepper

Whisk together until blended then add:

1/2 cauliflower, roughly chopped pieces3 medium potatoes, cut into inch size cubes
1/2 white onion, sliced thin
1 c shredded cheese (I used old cheddar)

Mix until all blended
Set on high for 4 hours
