We made taco’s the other night and had a few shells left over for the next day. Unfortunately, the shells ended up getting a bit crushed. So I improvised and made a taco salad, using the shells as the crunchy component and adding some chopped tomato, radishes, and the (heated up) taco meat. It was crying for a great adobo salad dressing!
This adobo salad dressing so easy to make, has some zip from the adobo, and a nice tang from the lime juice.It’s not really that spicy, just packs a ton of flavour in it and is the perfect compliment to a taco salad!

Adobo Salad Dressing
Ingredients
- 3 tablespoons lime juice
- 1 tablespoon adobo pepper and sauce
- 2 teaspoons minced garlic
- 1 teaspoon honey
- 1/4 teaspoon cumin
- salt & pepper to taste
- 1/4 cup olive oil
Instructions
- Put all ingredients in a food processor or bowl.
- While whizzing or whisking, slowly drizzle in the olive oil until incorporated.
